Ingredients:

4 cups plain flour

2 x 7g sachets dried yeast

1/4 cup caster sugar

1 1/2 tsp mixed spice

pinch of salt

1 1/2 cups currants

40g butter

300ml milk

2 eggs, lightly beaten

Flour Paste:

1/2 cup plain flour

4 - 5 tbsp water

Glaze:

1/3 cup water

2 tbsp caster sugar

butter, to serve

Step 1

Start by combining the flour, yeast, sugar, mixed spices, salt and currants in a big bowl. In a small saucepan, melt the butter over medium heat. Add the milk and heat for 1 minute or until lukewarm. Add the warm milk mixture, along with the eggs, to the currant mixture. Mix until the dough almost comes together. Finish off by using clean hands to finish mixing to form a soft dough.

Step 2

Next, it’s time for some kneading. Place the dough on a floured surface and knead for about 10 minutes, or until the dough is smooth. Place into a lightly oiled bowl, cover it with plastic wrap. Set it aside in a warm, draught-free place for 1 to 1.5 hours, or until the dough doubles in size.

Step 3

Line your baking tray with baking paper. Knead for 30 seconds on a lightly floured surface until smooth. Divide your dough into 12 even portions and shape each portion into a ball and place them on the tray, making sure to leave a little room between each ball. Cover with plastic wrap and set aside in a warm, draught-free place for 30 minutes (or until the buns double in size). Preheat your oven to 190°C or 170˚C fan-forced.

Step 4

It’s time to add the crosses on to your hot cross buns. Mix flour and water together in a bowl, until smooth. If the paste is too thick, add a little water. Spoon the mixture into a snap lock bag and snip off the corner of the bag. Pipe your flour paste over the top of each bun. Bake for 20 to 25 minutes, or until buns are cooked through.

Step 5

Now, make the glaze. Start by melting together water and sugar on low heat, stir until the sugar is completely dissolved. Bring to a boil and let it bubble away for 3-4 minutes, before brushing it generously over your warm hot cross buns. Now they’re ready to enjoy! Serve warm with butter or at room temperature.
